Chicken in Wine, with Black Olives, Mushrooms, Lemon and Artichokes
Ingredients:
Chicken Breast cut into bite site chunks dredged in flour seasoned with salt and pepper
Olive oil for sauteing
Roasted Black Olives
Quartered White Button Mushrooms
Dry White Wine for de-glaceing pan
Chicken Stock
Quartered Lemons
Marinated Artichokes and marinade
Saute Chicken in batches, do not over-crowd, cook until still pink inside, add olives and mushrooms and continue cooking for 2 more minutes, add wine and de-glace the pan, add lemons, cover with chicken stock and bring to simmer, the stock will start to thicken like a gravy, add artichokes and marinade, stir to mix well and simmer for a couple more minutes. Serve hot on bread bowl, or on pasta, or in a bowl like a stew with Italian bread on the side and enjoy.
